Vegan Black Bean Burrito

Ingredients

  • Avocado
  • Baby Tomatos, salad and plum are okay too
  • Black beans (too obvious?)
  • Coriander
  • Lime
  • Packet mexican style rice
  • Paprika
  • Red onion
  • Small garlic clove
  • Toritlla wrap or GF alternative
  • Vegan Cheese
  • Chilli flakes(optional)
  • Salad (optional)
  • Salt (optional)
  • Tortilla Chips (optional or are they?)
  • Vegan Peranaise orf mayonnaise (Optional)

  1. Place 3 tbsp. of black beans in a microwaveable bowl with 2tbsp of water. Place a microwaveable plate on top and microwave for 3mins on high.
  2. Whilst beans are cooking make the avocado mix. Place half an avocado in a bowl and mash. Tear or chop a sprig of coriander minus the stalks and stir into the mix along with a small pinch of salt, half tsp of paprika and a quarter of tsp of diced fresh garlic and chili flakes to taste. You can also use garlic granules.
  3. Squeeze in a quarter of a lime and stir well until all ingredients are evenly distributed. Taste and add more spices, salt and lime as desired. Place to one side.
  4. Carefully, remove the beans from the microwave. When removing the plate beware of steam being released. Drain remaining water and place to one side.
  5. Add 3 tbsp. of the micro rice onto the plate and cook for 1.5 to 2 mins. As there is less rice it cooks quicker than packet instructions.
  6. Whilst rice is cooking dice a quarter of a small red onion and 3 cherry tomatoes or half a salad tomato. Place to one side.
  7. Carefully remove rice from the microwave and place to one side.
  8. Pop a tortilla wrap or GF alternative into microwave for 10 seconds to gently warm and soften the wrap.
  9. Now its time to fill the burrito!
  10. Spread your avocado mix onto the center of the wrap keeping 2 inches minimum of the tortilla bare from the edge (see photo), this will be important in the wrapping stage.  
  11. Squirt your chosen sauce, my preference is Nandos vegan peranaise, over the avocado in a zig zag movement still keeping the edge free.
  12. On one side of the avocado mix place a line of the black beans, next to it the rice, next the chopped tomatoes and the onions. Sprinkle a small handful of grated cheese over the ingredients.
  13. Time to fold!

    If you are struggling to wrap, it may be too full.
  14. Once wrapped place a griddle on the stove and heat on medium, once the pan is warm place burrito into the pan and cook either side until gently browned. Alternatively cook in a sandwich press or under a grill.
  15. Slice in half and serve with salad and a side of tortilla chips or enjoy as is!

Tip – For more spice sprinkle diced jalapeños over the ingredients before wrapping. Other good adds are black olives, sweetcorn and tabasco!
